What is stock Android

Stock Android 

Stock Android means the default ROM image on
your phone. In plain words, it is the default operating
system version that came from the manufacturer.
Some manufacturers like Samsung run their own
version of user interface (UI) on their devices like
Samsung's Touchwiz, HTC's Sense, Asus,mi note 5 pro etc........

It is a term used to refer to the completely pure and untouched version of Android. 
Normally, companies add a custom UI and a few of their own apps on top of Android. Companies are allowed to do modify Android to their liking in any way they want as it is open source.
Stock Android denotes the version of Android which is completely based on how Google envisioned Android to be. It does not include anything extra other than the core Android apps and UI.  
You can clearly see how Samsung has modified the Android UI by adding a custom UX called Touchwiz. This barely resembles the version of Android which Google provides in its Nexus phones. 

Advantages of stock Android


Asus,mi note 5 pro,Samsung, HTC, even Micromax and other OEM's (Other Equipment Manufacturers) to distinguish their smart phones from one another often fill up the internal storage with softwares which are gimmicky in features or not useful for a majority of users. These unneeded apps fill up the internal storage as they keep getting automatically updated, increasing their size overtime and wasting resources that would have been useful for  other apps that user actually needs. Stock android gets rid of this crapware making phone more responsive and longer lasting on a single battery charge.

Google Optimised: OEM's also modify the firmware of the device often for either locking it down with their services or restricting the hardware on some models (some manufacturers disable gps via software because terms & conditions with the operators dont allow them to provide gps to low costing cell phones, forcing people needing gps service to 'upgrade', this is usually prevalent in western & european markets). Stock Android Roms does'nt have those restrictions.

Freedom: A tweaker can get most out of his device on a stock plain andorid rom rather than a customized, bottled down manufacturer supplied rom. Android is google's way of distributing its services, & unlike OEMs, until you're using Google's services such as Play Store, Play Books, etc on your device they don't care what you use your android for.

Lastly it all comes down to personal preference, if you prefer preloaded apps, you might not like plain stock android, but if you want maximum out of your device i would recommend to go for it.
